The Story Behind This Recipe

I stumbled across kelp noodles at the store one day and was instantly intrigued. On a hectic weeknight, trying to throw something together with what I had at home, I remembered one of my favorite comfort dishes: Pad See Ew. It’s a simple stir-fry that you can probably make with pantry staples. I always keep a bag of Kirkland Signature Frozen Wild Argentine Shrimp in the freezer—they’re a lifesaver on nights like this because you can toss them straight into the pan, even if they’re frozen. While nothing beats classic Pad See Ew, this low-carb version with kelp noodles really hits the spot. It’s light, satisfying, and comes together fast. And of course, feel free to swap in whatever noodles you have on hand!

What You'll Need

  • 12 peeled and deveined shrimp
  • 1 bunch chinese broccoli, leaves and stems seperated
  • 1 onion, sliced in strips
  • 1 clove garlic
  • 1 package kelp noodles
  • 1 Tbsp neutral cooking oil
  • 2 Tbsp sugar
  • 2 Tbsp soy sauce
  • 2 Tbsp oyster sauce
  • 1 Tbsp arrowroot starch
  • 1 Tsp fish sauce
  • Dash red chili flakes (optional)

Let's Get Started

  1. 1Sautee the onions in a large pan until softened, about 5 minutes.
  2. 2Add the broccoli stems and garlic and sautee another 3 minutes.
  3. 3Add in shrimp and continue to sautee until cooked.
  4. 4Mix together sugar, soy sauce, oyster sauce and arrowroot starch. Pour into pan.
  5. 5Rinse kelp noodles under water, the add them to the pan and mix.
